Mushroom stroganoff

Ingredients

  • Some sliced mushrooms (use a lot if you like them like me)
  • 2 red onions (sliced)
  • a sliced red pepper (optional) -
  • carton of soya cream
  • carton of Parmezano
  • soya margarine and/or oil (for frying)
  • black pepper
  • salt to taste
  • fresh basil (if available)
  • glug of white wine (optional)

Method

  • Fry the sliced red onions and red peppers in a frying pan in soya margarine and oil until the onions are soft.
  • Add the mushrooms (as many as you like - I use lots)
  • Fry everything together until the mushrooms are going brown.
  • Pour in some soya cream so that the veg are nicely covered (you do not need a whole carton).
  • Continue to stir and cook for a minute or so, adding white wine if you want.
  • The mix will look like a beige emulsion and should be quite thick.
  • Add black pepper, salt (if you like it), and a sprinkling of Parmezano if you have it.
  • Tear up some basil leaves and add them at the end.
  • Serve with pasta, rice or a baked potato and some green salad.
  • Yum!
