Mushroom stroganoff

Ingredients
- Some sliced mushrooms (use a lot if you like them like me)
- 2 red onions (sliced)
- a sliced red pepper (optional) -
- carton of soya cream
- carton of Parmezano
- soya margarine and/or oil (for frying)
- black pepper
- salt to taste
- fresh basil (if available)
- glug of white wine (optional)
Method
- Fry the sliced red onions and red peppers in a frying pan in soya margarine and oil until the onions are soft.
- Add the mushrooms (as many as you like - I use lots)
- Fry everything together until the mushrooms are going brown.
- Pour in some soya cream so that the veg are nicely covered (you do not need a whole carton).
- Continue to stir and cook for a minute or so, adding white wine if you want.
- The mix will look like a beige emulsion and should be quite thick.
- Add black pepper, salt (if you like it), and a sprinkling of Parmezano if you have it.
- Tear up some basil leaves and add them at the end.
- Serve with pasta, rice or a baked potato and some green salad.
- Yum!
